Prepare 1 bunch of pumpkin leaves.

Peel the potatoes wash and boil them with salt add maize and continue boiling till ready to mash.

In another sauce pan steam your pumpkin leaves and blend them.

Mash the potatoes and add in your blended pumpkin leaves and mix well..

In another pan add oil onions and garlic let them cook add them on the mashed mixture and incorporate well..

Serve with vegetables or Stew or sauce..
It consists of green maize, potatoes, green peas and kahurura (pumpkin leaves) all mashed together.
There are many variations of mukimo recipe.
Some people use spinach as a substitute for the pumpkin leaves or beans to substitute for the green peas.
