Mukimo. Mukimo Recipe: Mukimo is a meal whose origin is Central Kenya (Agikuyu community) but it's being served in hotels across the country keeping in mind of the diversity of Kenyan people. Mukimo (Irio) is a Kenyan meal (predominantly from communities living around Mount Kenya) prepared by mashing potatoes and green vegetables.
Though originally from the central part of Kenya, Mukimo is now consumed amongst various communities in Kenya.
Mukimo is a popular Kenyan one-pot dish consisting of potatoes, corn, beans, peas, and greens that are cooked in water with some salt, then mashed into a purée.

Ingredients of Mukimo

It’s 1 kg of potatoes.

It’s 1 bunch of pumpkin leaves/spinach(soft and fresh).

Prepare 1 bunch of spring onions(finely chopped).

You need 2 cups of soft maize.

Prepare 2 spoonful of cooking oil.

Prepare to taste of Salt.

Mukimo step by step

Peel the potatoes and slice them into halves,wash them clean and set aside..

Prepare the pumpkin leaves by removing the stalk and shred them into sizeable pieces. I blended mine before use..

Mix the pumpkin leaves,maize and potatoes in a sauce pan and add some water.Just enough for everything to cook well..

Place the sauce pan on fire and let the mixture boil for 30 minutes under medium heat..

Add a pinch of salt and let it cook for 10 - 15 minutes..

Reduce the heat and mash everything together using a wooden spoon until all blends in well.Remove from heat and set aside..

In another sauce pan, brown the onions then reduce the heat to minimal and add the Mashed mixture.Mix well..

Serve hot..
It consists of green maize, potatoes, green peas and kahurura (pumpkin leaves) all mashed together.
There are many variations of mukimo recipe.
Some people use spinach as a substitute for the pumpkin leaves or beans to substitute for the green peas.
