Ragi Idli. Idli is our favorite breakfast and so I make these soft and fluffy steamed rice-lentil cakes usually on weekends. This recipe has a millet added in it and it is Finger millet or ragi or nachni. Ragi is a millet grain which has many health benefits.

Traditionally idli recipe is made with urad dal and idli rice.

  1. It’s 1 cup of ragi flour (finger millet flour/nachni).

  2. You need 1/2 cup of split white urad dal.

  3. Prepare 1 cup of idli rava or rice.

  4. It’s 1/4 tsp of Baking soda.

  5. You need to taste of Salt.

  6. You need as required of Oil to grease.

  7. You need 1 tsp of fenugreek seeds.

Instant ragi idli is a healthy and nutritious breakfast where idlis are made with ragi flour, also known as finger millet flour.

Ragi Idli step by step

  1. Soak rice & urad dal for 4-5 hrs in water..

  2. Drain excess water. Add fenugreek seeds and salt. Then grind both in a smooth paste. Add ragi flour. Mix well..

  3. Keep it for fermentation for 7-8 hrs. After it is ferment add baking soda..

  4. Grease idli plates with oil. Pour idli batter in Idli plates. Add 1 glass of water in idli maker. Bring a boil. Put idli plates in maker. Cover the lid. Steam it for 12-15 minutes. Check with knife. If it comes out clear then switch off gas..

  5. Remove plates from idli maker. Let it cool. Serve hot with sambhar or your choice of chutney..
