Recipe: at dinner Spicy githeri Delicious, fresh and tasty.

Spicy githeri. Adapted from an old Kenyan recipe, Githeri features slow-cooked corn and beans, gently simmered in a fragrant and spicy coconut milk base. One of my favourite foods -spicy githeri. If you think Githeri is boring,first of all I dare you to try this recipe and secondly, we can't be friends!!!

The basic recipe will have sweet corn and beans boiled together and then fried in little oil to get a soft texture.

It's called Spicy Kenyan Vegan Githeri.

Githeri is a traditional Kenyan dish of corn and beans.

You can cook Spicy githeri using 13 ingredients and 7 steps. Here is how you cook that.

Ingredients of Spicy githeri

  1. Prepare 100 g of boiled maize.

  2. It’s 150 g of boiled beans.

  3. It’s 2 of medium sized tomatoes, pureed.

  4. It’s 1 of large onion, chopped.

  5. It’s 1 tbsp of ginger garlic paste.

  6. Prepare 1 of green bell pepper, chopped.

  7. You need 1 of chilli beef cube.

  8. Prepare 1 tbs of vegetable oil.

  9. You need 2 of large carrots, peeled and chopped.

  10. It’s 1/2 kg of potatoes, peeled and chopped.

  11. You need 1 of royco cube.

  12. It’s of salt and peper.

  13. You need of Dhania, chopped.

This one stays true to its roots and is composed of white beans, pigeon peas, corn, curry rice pilaf and kachumbari slaw.

The crispy slaw was a nice contrast to the hearty beans.

Africa served up a curry rice pilaf dish with white beans, pigeon peas, and kachumbari slaw.

I really enjoy the flavor combination.

Spicy githeri instructions

  1. Heat your sauce pan on a medium heat and then add the vegetable oil followed by the onions and cook them until they just turn translucent..

  2. Add the ginger garlic paste and cook for about a minute..

  3. Add pureed tomatoes and royco cube, stir, cover and reduce heat to a low simmer. Cook for about 5 minutes or until the mixture reduces and thickens..

  4. Add carrots and potatoes. cover then simmer for 5 minutes before adding the maize and beans..

  5. Add salt and freshly cracked pepper to taste..

  6. Cover and simmer for about 10 minutes for the sauce to thicken and all the flavors to come together..

  7. Finally, add the dhania and hoho and simmer for just a minute. Turn off the heat and serve..
