You need 3 bunches of pumpkin leaves.

Prepare 1 bunch of spring onion.

Fry the spring onion in a sufuria.

Add in the potatoes and stir. Slightly more potatoes are used in the image..

Add water and cover for a few minutes..

Add in the chopped pumpkin leaves. Also add in the salt and 1tbsp of baking powder. The later softens the leaves..

Add in the maize and the peas after a few minutes..

When the water is all dry, remove from fire and mash..

Can be served with a variety of stews. I opted for stewed chicken.
It consists of green maize, potatoes, green peas and kahurura (pumpkin leaves) all mashed together.
There are many variations of mukimo recipe.
Some people use spinach as a substitute for the pumpkin leaves or beans to substitute for the green peas.
