In your cooking pot, saute onions and add black pepper till onions are translucent.

Add in tomatoes, salt, garlic and ginger paste and keep stirring till the tomatoes cook.

Add in the maize and beans and keep stirring to mix well.

Add a little water and let it cook, meanwhile you can now add the curry powder and let it cook as well. Adjust seasoning.

When the water has reduced and your githeri looks well blended, remove your pot from heat.

Food is now ready to be served, cut chilli can be added at this point.
It is however eaten all over Kenya and is also know as Mutheri among some Kenyans.
