Mukimo (Irio) is a Kenyan meal (predominantly from communities living around Mount Kenya) prepared by mashing potatoes and green vegetables.

You can have Mokimo using 7 ingredients and 8 steps. Here is how you achieve that.

Ingredients of Mokimo

  1. It’s 2 kg of irish potatoes.

  2. You need 3 bunches of pumkin leaves.

  3. Prepare 1 of large onion.

  4. You need of Salt.

  5. It’s of Cooking oil.

  6. It’s 1 tablespoon of butter (optional).

  7. It’s of I cup maize.

It may also include maize and beans.

Mukimo is mostly served as an accompaniment for meat-based stew and nyama choma.

Though originally from the central part of Kenya, Mukimo is now consumed amongst various communities in Kenya.

Mokimo instructions

  1. Peel, wash and boil the potatoes.

  2. Boil the pumkin leaves then blend.

  3. Boil the maize too.

  4. Mix the maize and potatoes.

  5. In a pan, fry the onions add in salt and butter. Stir and add in the maize/potato mixture.

  6. Stir to mix well. Then add in the blended pumkin leaves little by little as you stir.

  7. Mash into a fine consistency.

  8. Serve and enjoy with some beef stew.
