Githeri. Githeri (Gĩtheri), also called muthere or mutheri, is a Kenyan traditional meal of maize and legumes, mostly beans of any type mixed and boiled together. The maize and beans are mixed together in a sufuria or pot, water is then added and the mixture boiled until the food is cooked and ready to eat. Githeri is the staple food of the Gikuyu, Meru and Embu people in the Central Province of Kenya.
It is an easy one-pot meal, and together, the beans and corn provide a vegetarian dinner that is high in protein.

First, ensure your beans and maize are boiled.

In a sufuria, add your cooking oil and onions let it cook until it is a bit sweaty,then add your ginger and garlic and stir..

Add your tomatoes, let it cook for a minute, then add your carrots stir everything..

If you wish you can add spices of your choice or even chillies or chill pepper,then add the chopped hoho and salt.

Add the mixture of beans and maize, stir everything to together add a bit of warm water not too much in order for it not to be watery..
