Recipe: Perfect Mashed mukimo Delicious, fresh and tasty.
Mashed mukimo. My friend Susan from Nairobi, Kenya taught me how to prepare this traditional Kikuyu dish that's served at all her major ceremonies in her homeland. It is a side dish made by mashing beans, corn, potatoes. Mashed potatoes with vegetables best known as Mukimo.
In another larger pot/Sufuria, pour in the spring onions and cooking oil and place on fire.
Mix until the onions turn golden brown then adjust the heat to minimal and add the Mashed mixture.
You can now remove from the heat and serve while hot.

Ingredients of Mashed mukimo

Prepare of Onion.

It’s of Pre boiled minji.

It’s of Pre boiled potatoes.

Prepare of Cooking oil.

It’s Pinch of salt.

Prepare of Margarine(optional).
Mukimo can be served with beef stew, chicken stew and Kachumbari on the side.
Mukimo is a staple food of the Kikuyu community in Kenya.
Mukimo comprises of potatoes, pumpkin leaves, green peas, soft and fr.

Mashed mukimo instructions

Fry the onions until golden brown and add salt.

Add the minji and fry a little bit.

Add the potatoes.

Marsh the potatoes and add the margerine.

Serve with beef stew.

It consists of green maize, potatoes, green peas and kahurura (pumpkin leaves) all mashed together.
There are many variations of mukimo recipe.
Some people use spinach as a substitute for the pumpkin leaves or beans to substitute for the green peas.
