Three Olive Hummus. Three Olive Hummus This is a delicious hummus cocktail made with oregano and three types of olives. This started out as the slightly more exciting "Three Olive Hummus," but when I realized I was out of plain black olives, I went with two olives instead. And it was just as tasty, so I went with it. "Two Olive Hummus," though, doesn't have quite the same ring to it, so just plain "Olive Hummus" it is!
In fact, hummus is the Arabic word for chickpea.
You may notice that many hummus recipes call for garbanzo beans, not chickpeas.
Now, here is another of my savory creations: an amazing, simple Olive Hummus.

Ingredients of Three Olive Hummus

You need of Tahini, stirred well.

It’s of Lemon Juice.

You need of Extra Virgin Olive Oil.

Prepare of garlic.

It’s of salt, to taste.

Prepare of paprika.

You need of red pepper flakes.

Prepare of dried oregano.

It’s of sliced green olives.
-
It’s of sliced black olives.
-
It’s of sliced kalamata olives.

It’s of water.

It’s of sugar.

You need of chickpeas, drained and rinsed well.
As with all of my recipes, it is a very straightforward one.
Nothing fancy about this, so everybody can make it at home.
All you need is a blender or food processor.
As a typical Hummus, it takes some chickpeas, a bit of tahini, a little spice - and, you guessed it.
Three Olive Hummus instructions

Warm the chickpeas in a large, covered bowl in the microwave for 3 minutes, stirring twice..

In a food processor place the tahini and lemon juice. Process on high for 2 minutes until it looks whipped. Scrape down the bowl with a spatula..

Add the garlic and process for 1 minute on high. Scrape down the bowl with spatula..

Add the olive oil, salt, sugar and spices. Process on high for 1 minute. Scrape down the bowl with spatula..

Add the warmed chickpeas and process on high for 2 minutes. Scrape down the bowl..

Add water 1 tbsp at a time, processing after each addition, until the hummus reaches your desired consistency. You may need more or less water depending how thick you want it..

Process on high for 2 minutes until the hummus is smooth..

Add the olives and process for 30 seconds..

Serve with a drizzle of olive oil and sprinkle of spices. It is an excellent dip for cut vegetables, crackers, chips, pita or as a spread inside sandwiches..

I really like using fruity, light flavored olive oils when making hummus.
