Kodo idli. Kodo Millet Idli Recipe / Varagu Idli Recipe. Cooking with millets series has made me think about new recipes which can be made using them all the time. I have share thinai idli recipe before, but it has rice in them.

Kodo Millet is an easily available millet.

It is called as Kodra in Hindi and Harka in kannada and Koovaragu in Malayalam.

I have just replaced Varagu arisi with normal idli rice.

You can have Kodo idli using 5 ingredients and 5 steps. Here is how you achieve that.

Ingredients of Kodo idli

  1. Prepare 2 cup of Kodo millet.

  2. Prepare 1/2 cup of Urad dal.

  3. Prepare 1/2 tsp of Fenugreek seeds.

  4. Prepare as needed of Water.

  5. You need to taste of Salt.

The idli turned out super soft and no one could make out that it is millet idli.

Kodo millet helps keep diabetics under check, helps lose weight, reduces joint pains and has got lot of other health benefits.

Kodo idli instructions

  1. Take all the ingredients given above except salt and wash them twice in water to remove the debris.Soak it together for 4 hours..

  2. Take a big mixie jar and grind them in two batches adding enough salt & water.Please do not add more water because they can be easily ground in less water.So use water only when needed..

  3. The consistency of batter should be like our regular idli batter.If the batter is too watery,u cannot make idlis.Idli will be flat and sticky.If u add very less water,idli will be hard.So take care while adding water..

  4. Ferment it overnight or minimum 10 hours (if it is winter).The next morning,batter would have raised in volume but not doubled.

  5. Stir the batter well with a ladle and make idlis.Steam it in an idli pot for 10 minutes..Remove with a spoon and serve hot with chutney.
