Githeri. Githeri (Gĩtheri), also called muthere or mutheri, is a Kenyan traditional meal of maize and legumes, mostly beans of any type mixed and boiled together. The maize and beans are mixed together in a sufuria or pot, water is then added and the mixture boiled until the food is cooked and ready to eat. Githeri is the staple food of the Gikuyu, Meru and Embu people in the Central Province of Kenya.

It is an easy one-pot meal, and together, the beans and corn provide a vegetarian dinner that is high in protein.

Githeri is a simple yet nourishing dish that originated with Kikuyu tribe.

In modern times it has become popular throughout Kenya.

You can have Githeri using 12 ingredients and 5 steps. Here is how you cook it.

Ingredients of Githeri

  1. Prepare of Boiled githeri.

  2. Prepare of Chopped onions.

  3. It’s of Diced tomatoes.

  4. You need of Diced coriander.

  5. You need of Tomato paste (optional).

  6. Prepare of Cumin.

  7. It’s of Black pepper.

  8. Prepare of Salt.

  9. You need of Cooking oil.

  10. You need of Water.

  11. Prepare of Green/red/yellow/ whichever combination of the three bell pepper.

  12. It’s of the measurements depend on the quantity of githeri you want to fry.

The combination of beans and corn supplies a full complement of protein for the often protein-poor diet of many Kenyans.

Githeri is a traditional kenyan dish of which the name derives from the Kikuyu people of Kenya.

Githeri step by step

  1. In your cooking pot add oil followed by onion. Mix and cook till tender and translucent..

  2. Add tomatoes and cook till tender..

  3. Add tomato paste, cumin, black pepper and salt, and give everything a mix till well combined. Add some water to for a thick sauce. Cook for 2 minutes.

  4. Add your boiled githeri, some water if need be(don’t flood your githeri😂😂)and the bell peppers. give it a mix and let your stew cook for 5 minutes or so..

  5. Once done turn off the heat. Garnish with coriander and serve. Teremsha na chai au juice🤤.

It is however eaten all over Kenya and is also know as Mutheri among some Kenyans.

This typical kenyan stapple food consists mainly of beans and mais, but can be served with some extras.

Githeri - Kenyan Corns & Beans - is no exception.

So it's inspired by the original, but I can promise the real thing is better.
