Matoke. Matoke, locally also known as matooke, amatooke, ekitookye in southwestern Uganda, ekitooke in western Uganda, ebitooke in northwestern Tanzania and igitoki in Rwanda, is a starchy variety of banana. The fruit is harvested green, carefully peeled, and then cooked and often mashed or pounded into a meal. Matoke (or Matooke) refer to the plantain or plantain banana in Uganda, where plantains are a staple crop.
Matoke is a variety of banana indigenous to southwest Uganda.
It comes from the family of bananas known as the East African Highland bananas.
Matoke is used mainly for cooking when they are green and unripe.

You need 100 g of black beans(Njahi).

It’s 10 of big raw bananas peeled.

Prepare 5 of big potatoes peeled.

Prepare 1/4 of pumpkin.

Prepare 1 of chopped onion.

You need 1 of diced tomato.

It’s 1 of diced green bell pepper.

You need to taste of Salt.

It’s of Black pepper.

Matoke step by step

In a pan on heat add in sizeable amount of oil,add in your onion cook till golden brown color..

Add in your tomatoes,stir 2-3 min. then add in your clean potatoes.

Cover them for 10 minutes to cook,then add in your pumpkin with the green bell pepper stir them to mix and cover it to cook for 20 minutes.

Add in your raw bananas stir well cover it for 5 minutes.

Add in your black beans,salt to taste and your seasoning i used black pepper,stir and let it cook for 5 minutes as you stir..

Add in some little water for it to cook(level of the water should be slightly below the level of the food).

Cover it to cook.

After approx. 20-30 minutes keep checking if the water is no more..

You can now switch of the fire and mash your food.Its ready to be eaten😁.
If you use green bananas for this dish, make sure they are very green.
