Githeri. Githeri (Gĩtheri), also called muthere or mutheri, is a Kenyan traditional meal of maize and legumes, mostly beans of any type mixed and boiled together. The maize and beans are mixed together in a sufuria or pot, water is then added and the mixture boiled until the food is cooked and ready to eat. Githeri is the staple food of the Gikuyu, Meru and Embu people in the Central Province of Kenya.

It is an easy one-pot meal, and together, the beans and corn provide a vegetarian dinner that is high in protein.

Githeri is a simple yet nourishing dish that originated with Kikuyu tribe.

In modern times it has become popular throughout Kenya.

Ingredients of Githeri

  1. You need of Ready boiled githeri (maize n beans mixed).

  2. You need of Cubed carrots.

  3. You need of Cubed tomatoes.

  4. You need of Onion.

  5. Prepare of Chili.

  7. Prepare of Oil for frying.

  8. You need cubes of Royco.

  9. It’s of Green pepper cubed.

Githeri instructions

  1. Assemble all your ingredients,, clean and prepare them.

  2. Light up your gas,, in a frying pan, Sautee your onions until sweaty, and tomatoes and lets cook for three minutes..

  3. Add carrots,, stir well for a minute, add the pepper, chili, salt to your preferred taste, cubes and stir completely,, cook for two minutes and add the githeri. Put off your gas and simmer the food for three minutes. I like the crunchiness feeling of the pepper and carrots. Serve while still hot with avocado n black tea..

It is however eaten all over Kenya and is also know as Mutheri among some Kenyans.

This typical kenyan stapple food consists mainly of beans and mais, but can be served with some extras.
