Githeri. Githeri is native to East Kenya in particular and Africa as a whole - a one-pot meal, traditional made out of boiled corn and beans only. Corn and beans is a staple in African cuisine, they are cooked fresh, or dried and the flavor is unbelievable good without any adornments. Githeri (Gĩtheri), also called muthere or mutheri, is a Kenyan traditional meal of maize and legumes, mostly beans of any type mixed and boiled together.

It is an easy one-pot meal, and together, the beans and corn provide a vegetarian dinner that is high in protein.

Githeri is a simple yet nourishing dish that originated with Kikuyu tribe.

In modern times it has become popular throughout Kenya.

You can have Githeri using 10 ingredients and 4 steps. Here is how you cook that.

Ingredients of Githeri

  1. Prepare 2 cups of beans.

  2. You need 2 cups of green maize.

  3. You need of Green onions.

  4. Prepare 1 of big tomato.

  5. You need 1 of small hoho.

  6. Prepare 1 cup of Beef broth.

  7. It’s 1 tsp of curry powder.

  8. Prepare 1 tsp of cumin powder.

  9. You need of Cooking oil.

  10. Prepare to taste of Salt.

Githeri is a traditional kenyan dish of which the name derives from the Kikuyu people of Kenya.

Githeri instructions

  1. Make sure the beans and maize are well mixed together.

  2. In a sufuria heat oil,, put onions and stir they should be green and not brown,, put tomatoes and stir,, let it simmer for 3 minutes to allow the tomatoes to cook. Add diced hohos.

  3. Put the beans and maize mixture and stir,, add the beefbroth and allow to cook for 5 minutes,, add cumin and curry powder and stir,, put salt to your liking and remove from fire.

  4. Serve.

It is however eaten all over Kenya and is also know as Mutheri among some Kenyans.

This typical kenyan stapple food consists mainly of beans and mais, but can be served with some extras.
