Githeri. Githeri is native to East Kenya in particular and Africa as a whole - a one-pot meal, traditional made out of boiled corn and beans only. Corn and beans is a staple in African cuisine, they are cooked fresh, or dried and the flavor is unbelievable good without any adornments. Githeri (Gĩtheri), also called muthere or mutheri, is a Kenyan traditional meal of maize and legumes, mostly beans of any type mixed and boiled together.

It is an easy one-pot meal, and together, the beans and corn provide a vegetarian dinner that is high in protein.

Githeri is a simple yet nourishing dish that originated with Kikuyu tribe.

In modern times it has become popular throughout Kenya.

  1. Prepare 2 cups of Pre boiled maize and beans.

  2. Prepare of Chopped onions.

Githeri is a traditional kenyan dish of which the name derives from the Kikuyu people of Kenya.

Githeri step by step

  1. Fry the onions, garlic paste and coriander stalks together.

  2. Add in the chopped capsicum and chopped Carrots till tender but crunchy.

  3. Add in some water. Let is simmer. The cooking cream and finally the beans and maize mix.
