Matoke. Matoke, locally also known as matooke, amatooke, ekitookye in southwestern Uganda, ekitooke in western Uganda, ebitooke in northwestern Tanzania and igitoki in Rwanda, is a starchy variety of banana. The fruit is harvested green, carefully peeled, and then cooked and often mashed or pounded into a meal. Matoke (or Matooke) refer to the plantain or plantain banana in Uganda, where plantains are a staple crop.

Matoke is a variety of banana indigenous to southwest Uganda.

It comes from the family of bananas known as the East African Highland bananas.

Matoke is used mainly for cooking when they are green and unripe.

  8. Prepare of Dania.

  9. You need of Garlic powder/paste.

  10. It’s 1/4 tsp of turmeric.

  11. It’s 1/4 tsp of cinnamon.

  12. You need 1/4 tsp of white paper.

Matoke instructions

  1. Peel, wash and cut the bananas into halfs. Chop tomatoes and onions..

  2. Wash and dissect zucchini into half then slice into half moon. Chop capsicum and dania too..

  3. In a cooking pan heat oil and add onions, add salt let it cook for 2min,add tomatoes, let it simmer until tender then add spices, stir and cook for 2 min..

  4. Add bananas, stir while mixing, add water and milk cover and let it cook for around 15min..

  5. Add zucchini and let it cook for 5min then add capsicum and dania and let it cook for 2min..

  6. Serve while hot..
