Githeri. Githeri (Gĩtheri), also called muthere or mutheri, is a Kenyan traditional meal of maize and legumes, mostly beans of any type mixed and boiled together. The maize and beans are mixed together in a sufuria or pot, water is then added and the mixture boiled until the food is cooked and ready to eat. Githeri is the staple food of the Gikuyu, Meru and Embu people in the Central Province of Kenya.

It is an easy one-pot meal, and together, the beans and corn provide a vegetarian dinner that is high in protein.

Githeri is a simple yet nourishing dish that originated with Kikuyu tribe.

In modern times it has become popular throughout Kenya.

You can cook Githeri using 12 ingredients and 7 steps. Here is how you achieve that.

Ingredients of Githeri

  1. Prepare 4 cups of preboiled maize and beans.

  2. Prepare 2 of tomatoes.

  3. You need 1 of carrot.

  4. Prepare 6 of potatoes.

  5. Prepare of Few leaves dhania/cilantro.

  6. You need 1/2 tsp of curry powder.

  7. Prepare 1/4 tsp of black pepper.

  8. You need To taste of Salt.

  9. It’s 1 of spring onion.

  10. You need 2 cloves of garlic(crushed).

  11. Prepare 1 of small piece ginger(crushed).

  12. Prepare 1 of small piece tumeric(crushed).

The combination of beans and corn supplies a full complement of protein for the often protein-poor diet of many Kenyans.

Githeri is a traditional kenyan dish of which the name derives from the Kikuyu people of Kenya.

Githeri instructions

  1. Wash all the ingredients.Peel,cut into cubes or desired shapes..

  2. In a frying pan,heat oil,add the onions and the dhania stalks.Add crushed ginger,garlic and tumeric and fry till golden brown..

  3. Add carrots(i dont like mine cruchy,so I let them over cook)add black pepper,curry powder and salt and a little water and let it cook for 5 minutes..

  4. Add tomatoes and let it cook.Add your potatoes,water and let it cook..

  5. Add your preboiled maize and beans after the potatoes have cooked,add water.Test to taste the salt and add if needed.Let it cook..

  6. Add your dhania leaves and let it cook for a minute and simmer..

  7. Serve with avocado and enjoy!.

It is however eaten all over Kenya and is also know as Mutheri among some Kenyans.

This typical kenyan stapple food consists mainly of beans and mais, but can be served with some extras.
