Carribean Rice #MyUniqueRice contest. They appear on menus in all kinds of forms. Combine them all in the same dish and you have something special. The sweetness of the mango and coconut makes this dish suitable for curries, chicken, fish , and pork, all common Caribbean ingredients.

The only variations I used were adding a bit more of the coconut milk, fresh-squeezed lemon juice, and two soft chicken bouillon cubes for added flavor in lieu of adding more salt.

  10. Prepare 2 Tbsp of Olive Oil.

  11. It’s to taste of Some salt.

What makes this dish so enticing is coconut milk, coupled with scotch bonnet pepper (hot pepper), onions, garlic, thyme, and red beans.

For a deeper flavor, I added creole spice to up the flavor in this coconut milk rice and beans meal.

So think of it as Caribbean rice and beans with a creole flair.

  1. Saute the tomatoes with olive oil, then add Djorn Mustard and keep stirring on low heat.

  4. Serve hot and garnish with chilly flakes. Enjoy.
