Another way, I incorporate soya in the diet, is by preparing vegetable pulao using soya chunks, mixed vegetables and fried bread cubes.

Boil water + milk in a pan till it bubbles up rigourously.

Switch off and add the soya chunks and let it aside for few mins for it to grow in size.

To be honest, both of us are not big soya fans, but this pulao was a welcome change from our usual menu.

Soya chunks pulav instructions

  1. Boil rice drain water and keep aside… Boil soya chunks and drain it… In a kadai add ghee.

  2. Now add cloves black pepper whole and bay leaf saute it than add potatoes and fry it.. Now add chopped onions and tomatoes and capsicum and saute it… Now add few curry leaves raw mango chopped and cummin seeds and mix it and cook it.

  3. As vegetables gets cooked than add red chilli powder turmeric powder coriander powder and soya chunks water mix it.

  4. Now cover it with lid and let it cook for 5 to 10 mins on slow flame… As vegetables gets cooked than add rice over it.

  5. Now add pav bhaji masala garam masala and salt.. Mix it properly and cover it with lid.. And let pulav gets cooked on slow flame for 5 to 7 minutes.

  6. Now pulav is ready… Serve hot and enjoy😊.
