It goes best with sambar rice, rasam rice or even curd rice. Seppankizhangu(also known as Arbi / Taro Root) is a root vegetable which I never tasted before marriage and was introduced to me by my husband.
Arbi is also called as seppankizhangu in tamil language.
Sambar powder has got the right amount of spices which is ideal for this seppankizhangu fry.

You need 250 gm of taro/ Seppankizhanghu.

It’s 1 tsp of red chilli powder.

You need 1/4 tsp of garam masala powder.

You need 1 tsp of ginger garlic paste.

It’s 1 tbsp of corn flour.

It’s 1/4 tsp of turmeric powder.

Prepare To taste of salt.

It’s As needed of Oil for deep frying.
Add a teaspoon of rice flour to make fry more crisp and dry.
Adding Bengal gram flour/besan would also be added to make the fry dry and to retain its shape.
Taro root also is known as seppankizhangu in Tamil and arbi in Hindi is a root vegetable used in Asian cuisine.
Taro root is also a starchy vegetable and is cooked just like a potato.

Pressure cook taro for 1 whistle. Peel the skin and cut into desired shape. Set aside..

Deep fry in oil and take in a bowl..

In a separate bowl add turmeric powder,ginger garlic paste and red chilli powder..

Then add salt, garam masala and corn flour. Add little water and make into into a slurry..

Pour this over the fried taro and mix to coat all the pieces..

In a pan add 3 tbspn oil and roast the masala taro till crisp..
