Peel a number of potatoes depending on how many you intend to serve.

Prepare your other ingredients.

Boil your pumpkin leaves as you fry your onions and coriander. When ready blend all of them together.

Add your potatoes and green maize into a sufuria. Add a little water and pour the blended pumpkin mixture into it (water should be enough to remain for mashing). Add salt to taste and boil until ready..

When ready Mash your Mukimo.
It consists of green maize, potatoes, green peas and kahurura (pumpkin leaves) all mashed together.
There are many variations of mukimo recipe.
Some people use spinach as a substitute for the pumpkin leaves or beans to substitute for the green peas.
Mukimo is a Kenyan mashed potato dish that incorporates various other ingredients to your ordinary mash, elevating it both in flavour and nutrition and giving it its signatory vivid green colour.
