Ingredients of Pakarkai Poriyal/ Bittergourd Fry

  1. You need 1/4 kg of Pakarkai/Bittergourd.

  2. It’s of Oil-as required.

  3. Prepare 1/4 tsp of Mustard seeds.

  4. It’s 1/4 tsp of Urad Dal.

  5. It’s 1 of Medium Size Onion chopped.

  6. It’s of Curry leaves few.

  7. You need 5 of Garlic pods chopped.

  8. Prepare 1/4 tsp of Turmeric powder.

  9. It’s of Salt-as per your taste.

  10. It’s 1/2 tsp of Sambar powder.

  11. It’s 1/2 tsp of Chilli powder.

  12. It’s 1/4 tsp of Sugar.

Pakarkai Poriyal/ Bittergourd Fry instructions

  1. Wash and cut the Bittergourd into small pieces as shown in the picture..

  2. In a kadai, add 2 tsp Oil. Once the oil gets heat, add mustard seeds and urad dal. Fry it..

  3. Add onions and curry leaves. Saute till onions becomes translucent..

  4. Add turmeric powder and saute for a minute. Keep the flame in low..

  5. Then add Bittergourd, garlic, salt and 1 tsp Oil. Mix well..

  6. Stir well by adding little by little oil gradually. Stir fry it in low flame till Bittergourd gets cooked. The whole process should be done in low flame..

  7. Add sambar powder,chilli powder and little oil. Stir fry till it becomes half crispy. Dont cover and cook..

  8. Atlast add sugar and mix well. Dont add more oil as it releases oil atlast..

  9. Now its ready to serve. Serve as a Sidedish for your lunch..

I somehow started to eat the vegetable and became a great fan of this amazing vegetable.

Bitter gourd is one vegetable, which hubby buys quite often. i usually prepare pavakkai pitlai or pavakkai curry or fries with it.
