You need 2 of medium tomatoes.

Chop the onion carrot capsicum and celery stalk and keep a side.

In a pan pour the vegetable oil and then add the block of butter. Once melted add the chopped onion carrot capsicum and celery. Stir and cook until the onions are translucent or golden brown.

Add the curry powder and tomato paste and stir for a minute.

Finally add some coriander and switch off the fire. Stir and serve. I love mine with pepper so i added some chilli flakes. Enjoy.
