Githeri. Githeri (Gĩtheri), also called muthere or mutheri, is a Kenyan traditional meal of maize and legumes, mostly beans of any type mixed and boiled together. The maize and beans are mixed together in a sufuria or pot, water is then added and the mixture boiled until the food is cooked and ready to eat. Githeri is the staple food of the Gikuyu, Meru and Embu people in the Central Province of Kenya.

It is an easy one-pot meal, and together, the beans and corn provide a vegetarian dinner that is high in protein.

Githeri is a simple yet nourishing dish that originated with Kikuyu tribe.

In modern times it has become popular throughout Kenya.

Ingredients of Githeri

  1. You need 1 kg of Pre-Boiled maize and beans.

  2. It’s 1 of Large Onion.

  3. You need 1 bunch of spring onion.

  4. It’s 3 Cloves of Garlic.

  5. Prepare 3 of large tomatoes.

  6. Prepare 1 of grated carrot.

  7. Prepare 1 teaspoon of parsley.

  8. Prepare 1 teaspoon of garlic.

  9. Prepare 1 teaspoon of oregano.

  10. It’s 1/2 teaspoon of turmeric.

  11. You need 1/2 teaspoon of black pepper.

  12. Prepare cube of Knorr Chicken.

  13. It’s 1 teaspoon of coriander.

  15. You need 3 tablespoons of coconut milk.

  16. You need of Water.

  17. It’s of Salt.

The combination of beans and corn supplies a full complement of protein for the often protein-poor diet of many Kenyans.

Githeri is a traditional kenyan dish of which the name derives from the Kikuyu people of Kenya.

Githeri step by step

  1. Saute the onion and the spring onion.

  2. Add tomatoes and Simmer for 5 minutes then add the spices, soy sauce and the garlic..

  3. Then add the Githeri (Pre Boiled Maize and Beans), salt and water at the same level with the Githeri in the sufuria. Let it cook for 20 minutes the add the coconut milk and switch off the cooker..

It is however eaten all over Kenya and is also know as Mutheri among some Kenyans.

This typical kenyan stapple food consists mainly of beans and mais, but can be served with some extras.
