Ingredients of Mukimo(mokimo)

  1. Prepare 1 of .Pumpkin leaves (specifically for mokimo).

  2. Prepare 2 of .Irish potato.

  3. Prepare 3 of .Tender green maize.

  4. You need 4 of .Salt to taste.

  5. You need 5 of .Blender.

WHAT YOU NEED TO MAKE KENYA MUKIMO RECIPE ·Fresh green maize (shelled). ·Kahurura(the tender young leaves of a pumpkin).

Mukimo is one of Kenya's and particularly Gikuyu's favorite dish.

No ceremony or celebrations of any kind is complete without a tasty Kenyan Mukimo.

It is a one pot balanced dish which derives its name from the work 'kima' meaning mash.

Mukimo(mokimo) instructions

  1. In a cooking pot add the pumpkin leaves and leave to boil.

  2. Do the same to the irish potatoes and green maize both seperately until they are ready..

  3. Make sure you do the boiling with a pinch of salt in all the three.

  4. Blend the pumpkin leaves and set aside.

  5. In a bowl mash potatoes until they are fine with no particles.

  6. Add the blended pumpkin to the mashed potatoes and mix until its all mixed together.

  7. Add your boiled tender green maize and mix once more.

  8. Serve with your favourite soup,meat or vegies.
