There's nothing much to be said about this classic Bengali delicacy.
This simple Bengali style egg and potato curry is one of the best forms of egg curry for sure.
You can cook Haanser dimer dalna using 13 ingredients and 9 steps. Here is how you achieve that.
Ingredients of Haanser dimer dalna

It’s 4 of hard boiled duck egg.

You need 2 of potatoes (cut into lengthwise half moon shape).

Prepare 3 tablespoons of onion paste.

Prepare 1 tablespoons of ginger and garlic paste.

It’s 1 of big tomato chopped.

Prepare 1 teaspoon of coriander powder.

It’s 1 teaspoon of cumin powder.

Prepare 1 teaspoon of turmeric powder.

Prepare 1 teaspoon of red chilli powder.

It’s 1 teaspoon of sugar.

It’s to taste of Salt.

It’s 4-5 tablespoons of mustard oil.

Prepare 1 teaspoon of garam masala powder.

Bengali Egg Curry or Dimer Dalna/Jhol is not very different from the regular Indian egg curry.
This is not very thick gravy.
This is a thin stew like curry, When we, homemakers could not have ingredients in our pantry, Egg curry is the easiest dish to prepare.
Haanser dimer dalna step by step

Boil the eggs they should be hard boiled. Peel the eggs and make four slits on them. Rub them with pinch of turmeric powder, red chilli powder and salt..

Heat about 3 tablespoons oil in a pan. Gently put in the boiled eggs in and fry them until their skin is red. Take out the eggs and keep aside..

Add some more oil to the pan if needed. Add onion paste and saute for couple of mins. Sprinkle about 1teaspoon sugar and fry the onion until the onion is soft and turning light brown..

Now add the potatoes cut in thin half moon shape. Fry till the potatoes are half done..

Add ginger and garlic paste, red chilli powder, coriander powder and cumin powder. Sprinkle little water and saute for a couple of minutes..

Next add chopped tomato and fry till the tomato is all mashed up and cooked. There should not be any raw smell and you will see oil separating from the edges..

Add about 1 cup of warm water, salt to taste and let the gravy simmer to a boil..

When the gravy starts boiling, add the eggs. Reduce the heat and let the gravy simmer until it is thick..

Add garam masala powder and serve with steamed rice……….
As this curry does not need much ingredients, can be made very quick and easily.
