Mukimo wa Njahi is made with hyacinth beans (Njahi or Lablab purpureus (scientific name of the bean)), simmered with green maize till ready, then you add potatoes and bananas plus a few near ripe bananas (Marigu matotu) and salt to taste and mash them together.

Mukimo ya minji instructions

  1. Peel the potatoes.

  2. Boil the peas n maize till ready.

  3. Boil potatoes till ready.

  4. Blanch the pumpkin bleaves n add 1 teaspoon baking soda n blend.

  5. Fry the leek n onion in oil till translucent.

  6. Mash the potatoes,peas,maize.

  7. Add the pumpkin leaves n onions n serve.
