Fried njahi or black beans. Dolichos, turtle beans, the black bean, are a type of legume mostly referred to as Njahi. The black bean or njahi is a very nutritionally rich food. It is good for pregnant mothers and nursing mothers to stren.

They are most commonly found in and have been popularized by Latin American cuisine, and are known by many names in various cultures throughout South and Central.

It had all the flavors of a good stir fry, I used 'Njahi' because it's nutritionally underrated, and doesn't deserve the hate it gets.

Like other legumes, such as peanuts, peas, and lentils, black beans are prized for their high protein and fibre content.

Ingredients of Fried njahi or black beans

  1. It’s 250 g of njahi.

  2. Prepare 2 of grated carrots.

  3. You need 1 of onion.

  4. It’s 2 of tomatoes.

  5. You need 1 of gojet.

  6. It’s of Beef chill.

  7. You need of Garlic.

  8. It’s of Ginger.

  9. You need of Royce.

  10. You need of Salt.

  11. It’s of Cooking oil.

Alternatively, if you don't have time to soak the beans overnight, place the dry beans in a large bowl and pour boiling water over the beans, covering the beans with at least an inch of water, and let sit for one hour.

It contains soluble fibre that is very good in lowering cholestrol.

They take five months to mature.

Fried njahi or black beans step by step

  1. Fry the onions at a low medium heat.

  2. Once cooked add ginger and garlic. Cook for one minute.

  3. Add carrots tomatoes gojet and salt, cook still tomatoes forms a paste.

  4. Add the boiled black beans stir, add beef chill and Royce and mix well.

  5. Allow it to cook for 5 minutes.

  6. Add a quarter glass of soup to the njahi.

  7. Mix well once they boil for 4 minutes they are ready to serve.

  8. Steam the cabbage separately.

It is advisable not to uproot njahi, which is also known as black beans, after first harvesting since they re-sprout and produce new pods and one harvests in the eighth month.

Njahi should be sprayed at least three times in its life span against thrips.
