Kathal masala dry curry. Usually I make kathal biryani or chakka payasam or kathal ki sabji and kathal stir fry with coconut. This time due to the recipe request for a kathal curry, I asked my mom her recipe method. So the kathal curry recipe shared here comes from my mom.
Add the curry leaves and mustard seeds.

Take ½ kg of peeled jackfruit, apply some oil to your palms and chop it.

Ingredients of Kathal masala dry curry

It’s 500 gms of Kathal(jackfruit).

It’s 1 of Medium onion, finely chopped.

Prepare 2 of Medium tomatoes (1 deshi and 1 apple tomato), chopped.

Prepare 1 of Green chilli, chopped.

It’s 1 tsp of Ginger, grated.

Prepare 1/2 tsp of Garlic, grated.

You need 1 of Bay leaf.

You need 1/3 tsp of Panch phoran.

Prepare 1 tsp of Coriander powder.

You need 1/2 tsp of Cumin powder.
-
It’s 1/2 tsp of Kashmiri red chilli powder.

You need 1/3 tsp of Turmeric powder.

It’s 1 piece each of Khada garam masala.

Prepare 1/2 of Black cardamon.

You need 2 of Small cardamom.

It’s 3 of Pepper corn.

It’s 2 of Cloves.

You need 2 tsp of Oil.

Prepare 1 tsp of Ghee.
Add it in a cooker to boil along with a ½ cup of water.
Come the Jackfruit season, I can not refrain myself from making my favourite Jackfruit Curry (Kathal Masala / कटहल की सब्जी).
This is simple one pot Jackfruit curry.
Luckily I have a partner who is also huge fan of Jackfruit.
Kathal masala dry curry instructions

Cut the kathal to thin slices (julienne). Cook with turmeric and a little oil, in microwave oven till half cooked. In a wok heat the oil and ghee. Splutter the ponch phutan. Cook the garam masala in low heat till the aroma comes. Add onion and bay leaf and saute to get a translucent onion..

Then add ginger, garlic, green chilli, tomatoes and salt. Mix well. Cover and cook in low heat till the tomatoes are soft and mushy and the are separated. Now add the half cooked kathal, coriander, cumin, red chilli powder 2 tbsp water. Mix well, cover and cook in low flame for 5 minutes..

The curry is ready to serve. Garnish with coriander leaves..

Cooking in microwave oven saves time. Preparing masala in low flame takes time, but enhance the taste of recipe many fold..
