Ingredients of Hyderabadi mutton biryani

  1. You need 1 kg of mutton with bones.

  2. You need 1 kg of indian basmati rice.

  3. You need 1/2 kg of curd.

  4. You need strands of Some milk and saffron.

  5. It’s As needed of Oil in making yaqni and ghee for adding on top.

  6. Prepare 1/2 bunch of Coriander leaves chopped.

  7. You need few of Mint leaves handfuls chopped.

  8. It’s 2 teaspoons of Red chilli powder.

  9. It’s 3 teaspoon of Salt.

  10. It’s 1/2 teaspoon of Turmeric powder.

  11. You need 2 tablespoon of ginger garlic paste.

  12. You need to taste of Few green chillies added slits to it.

  13. Prepare 1 teaspoon of Fresh garam masala powder.

  14. It’s of Yellow food colour for garnish.

  15. Prepare 2 of Onions -large fried some in marination some for garnishing.

  16. It’s 1 of Lemon juice.

  17. It’s to taste of Also hard garam masala spices.

Also known as Kachche Gosht ki Biryani or Hyderabadi Pakki Dum Mutton Biryani, this Hyderabadi mutton biryani is straight out of every non-vegetarian's dream.

The traditional mutton dum biryani recipe is made by cooking the raw meat with spices for a couple of minutes and then it is covered with rice and kept on dum or under pressure until done.

Hyderabadi Mutton Biryani Recipe is one of my most favorite biryani recipes from hyderabadi cuisine along with haleem recipe.

Hyderabadi mutton biryani step by step

  1. Wash and Soak rice in water for 1 hour add in salt 1 teaspoon and add had garam masala spices ( I.e cardamom 8, cloves 8, shazera 1/2 teaspoon, cinnamon sticks 8.

  2. Fry onion golden brown and keep aside.

  3. Wash and start marination of mutton add curd all dry spices mentioned above with quantity add some fried onions leave some for garnishing.

  4. Then cook rice add few drops of lemon so your rice won’t stick (tip of the day).

  5. Pressure cook the mutton marination adding oil and coriander and mint leaves with all marination.

  6. Check if the mutton is soft like biryani mutton then open the lid and make it a think gravy no water should be left.

  7. Then once the rice is done make two half’s of the rice add in all mutton marination then add all the rice again.

  8. Lastly add milk with saffron and drops of yellow food colour add the oil in which u fried onions as required then add ghee 1 tablespoon.

  9. Add fried onion and coriander leaves for garnishing and keep on low to medium flame until it’s well steamed make sure it should not stick but u can smell the aroma around your place so u can understand it’s ready to eat.

  10. One last tip never immediately serve after cooking let it rest for atleast 20 minutes because the rice will break if u dish out immediately so let it rest and then u are good to go serve hot with curd raita and salad (carrot, beetroot, cucumber, radish) do like my recipe and give it a try u would just love it.

This biryani is a dum method perfect with cucumber raita or onion raita and I just love making mutton dum biryani all the time and this is a special hyderabadi mutton dum biryani recipe.

The biryani recipes always go well with mirchi ka salan or bagara baingan recipe.

Having loved eating Hyderabadi Mutton Biryani, I had to try it at home by slow cooking it to perfection.
