Aloo Dum or Dum aloo is made in innumerable ways in India.

Be it Kashmiri Dum Aloo, Shahi Mughlai Dum Aloo, Bharwan Banarasi Dum Aloo or Punjabi Dum Aloo, each version is special on its own and is relished by everyone.

Ingredients of Bengali Aloor Dom

  1. You need of peeled and boiled baby potatoes.

  2. It’s of mustard oil.

  3. You need of green chillies slit into half.

  4. Prepare of bay leaves.

  5. You need of cumin seeds.

  6. It’s of ginger paste.

  7. You need of cumin powder.

  8. It’s of sugar.

  9. Prepare of coriander powder.

  10. It’s of chopped coriander powder.

  11. Prepare of yoghurt.

  12. You need of red chilli powder.

  13. You need of garam masala powder.

  14. You need of water.

  15. Prepare of Salt.

This Bengali Dum aloo is known as Aloor dom or Aloor dum, It is so delicious and full of flavors.

I first tasted in a temple on Bengali New year and was mind blown it was finger licking good.

So I tried to ask the lady who made the food and she gave me a outline of the ingredients.

The Bengali Aloo Dum Recipe is a delicious recipe of potatoes that are simmered in spicy tomato onion garlic and a yogurt gravy.

Bengali Aloor Dom instructions

  1. Heat mustard oil in a kadhai. Add boil potatoes and fry until they turn brown from all sides. Remove them when done and keep aside..

  2. Now add bay leaves,cumin seeds and slitted green chillies in the same oil and let them crackle for a few seconds..

  3. Now add in ginger paste,cumin powder, coriander powder, red chilli powder,sugar,salt and yoghurt, stir well and cook until oil starts to separate..

  4. Add little water into the the masala and mix thoroughly..

  5. Now at the fried potatoes and a cup of water and bring the mixture to a boil..

  6. Cover and cook for 10-12 minutes on low heat..

  7. Add garam masala powder into the gravy and mix well..

  8. Sprinkle chopped coriander powder on the top,mix well and again cook for a minute..

  9. Switch off the flame when done..

  10. Garnish with more fresh coriander leaves and serve hot..

Dum is a process of slow cooking on low heat where we cook.
