  1. Prepare 1 of eggplant.

  2. You need 1 of onion chopped finely.

  3. You need 1 of tomato chopped finely.

  4. You need 1 tsp of capsicum chopped finely.

  5. You need 1 tbsp of coriander chopped.

  6. Prepare 1 of green chilli.

  7. Prepare 1 tsp of mustard oil.

  1. Slit eggplant and smear little mustard oil.Roast it on open flame turning it once when one side is roasted.After it is fully roasted set aside to cool.Chop all ingredients finely. Remove the skin and mash eggplant.Mix all chopped ingredients.Add 1 tsp mustard oil,little salt and chopped green chilli..

  2. Serve hot with roti.The best thing about this recipe is that besides roasting it needs no cooking and very healthy and tasty..

Mash the eggplant and add chopped onion, green chilies, coriander leaves, salt and sugar to it.

Drizzle one or two tsp. of mustard oil over it.

Note: If you really don't have an open flame gas stove you can roast your eggplant in oven.

It generally takes an hour to roast inside the oven.
