Barnyard Millet Idli. Millet idli dosa has been in my to try list for a long time. Millets like kuthiraivali, samai, varagu can be easily replaced for rice and I know it will turn out good. But took so long for me to try.
Barnyard millet idli has everything basic like it's counterpart.
Lentils, fenugreek seeds and millet (as a replacement to rice).
The key step in making really soft idli is grinding the lentils to perfection.

Ingredients of Barnyard Millet Idli

Prepare 3 cups of barnyard millet.

Prepare 1 cup of black lentils.

Prepare to taste of salt.

When you grind the pre-soaked black gram lentils the batter should be airy, fluffy and light.
Barnyard millet also known as kuthiraivali arisi (tamil)/ odalu (telugu) is a millet variety that is small in size, white in color, round in shape bigger than semolina/ sooji.
Barnyard millet is rich in fiber, iron and is also less in calories making it healthier than rice.
Barnyard millet with a taste similar broken rice can be used to prepare variety of dishes like idli, dosa, pulao, upma.
Barnyard Millet Idli step by step

Soak both the ingredients for 3 to 4 hrs..

Grind coarsely..

Keep aside for fermentation (6 to 8) hrs..

Take the idli cooker. Then, grease each plate of idli stand with cooking oil..

Pour water in the cooker and keep on flame..

Pour the batter into the idli maker (1 tbsp per slot).

Keep the idli stand in the cooker, and steam the idlis for to 12-14 minutes..

Serve hot with sambhar or chutney! Enjoy!.
Idli is a popular South Indian breakfast usually made with rice and lentil.
I can have idli for all three meals in a day or even for snacking :).
The recipe I'm sharing today is for Kuthiraivali idli which is another variation for the usual idlis as I have used barnyard millet instead of rice.
For this recipe I wanted to try adding more millet then rice.
It came out extremely soft and tasty.
