Ewedu and okro soup. How to cook okro soup with leafy vegetables. Okro soup is mostly served with solids. Sometimes I cook this without palm oil and serve with a little tomato stew.

For those who like locust beans, it tastes great in this soup.

Sometimes, I cook this soup with a little ugu in place of ewedu leaves, at other times, I add just hot leaf (uziza) to the okro.

This soup can be cooked with any vegetable of your choice.

Ingredients of Ewedu and okro soup

  1. Prepare of Ewedu.

  2. You need of Meat.

  3. It’s of Okro.

  4. Prepare of Oil.

  5. You need of Seasoning.

  6. Prepare of Daddawa(locust beans).

  7. It’s of Scotch bonnet.

  8. It’s of Red bell pepper.

  9. Prepare of Kanwa.

Ewedu leaf as the Yoruba's call it, Achingbara in Igbo, Rama in Hausa or Jute leaves in English Language is a green leafy edible vegetable that is prepared into a delicious slimy soup called ewedu.

Ewedu, like okro soup, is popularly used to eat some traditional Nigerian meals called swallows (like amala, eba, fufu, semo and the likes).

Just like ogbono soup and Ewedu soup, Okro soup has a viscous texture which makes it an acquired taste.

Talking about Ogbono soup - this is a thick delicious, and hearty soup made from the Wild mango seeds, and it has a ton of nutritional benefits.

Ewedu and okro soup instructions

  1. In a pot add your washed meat, seasoning, onions, salt and allow to cook.

  2. Add grinded scotch bonnet, pepper locust beans and grated okro and allow to cook for 10mnts.

  3. Then add the ewedu leaves and little kanwa and allow to cook for 5mnts.

  4. Served with tuwo.

Ewedu soup is the soup my Yoruba friend, Shade loved and always raved about in secondary school.

In the refectory, we were being served stew and Plain okro soup and the times I ate it I liked it, strange though.

So I promised myself that one day I will get to eat Ewedu soup.

Which is why I like soups like Ogbono and Ewedu.

Traditionally okro vegetable soup is made with fresh Ugu leaves but those my friends I don't have access to here.
