We all love that party jollof and wish we could cook it in the comfort of our homes, well here is my Party Jollof Recipe!!!! # foodfoliochallenge This traditional Nigerian dish brings out the best possible flavor of rice and chicken. Chicken is first sauteed on the stove top to produce a wonderful aromatic base for the rice.
In this recipe, I cooked the chicken with the jollof rice which makes it different from my other jollof rice recipe.
The two recipes look the same when ready but I would say this is tastier.

You need 2 Cups of Basmati Rice.

You need 1/2 cup of seaman’s butter.

You need 3 tablespoon of vegetable oil.

It’s 1 tbs of curry and tyme mixture.

You need 1 of knorr bullion cube.

Prepare 1 of plum tomatoe for garnish.
First, you have to bake the chicken and for that, wash and cut the chicken.
Season, the chicken with the spices mentioned in the recipe below.
Jollof rice is a West African dish common in Nigeria, Senegal and Ghana.
This Ghanian version adds chicken and peppers to the tomato rice for a one-pot meal.

Start by adding 4 cups of water to a deep pot and boiling your rice, once it’s been cooked to the right texture, rinse with cold water / drain and set aside. In a skillet /pot add your butter and vegetable oil, once its melted and combined add in the thin sliced onion (in ring shape)..

Let it fry for a minimum or two then add in your Tomato and pepper purée, add in the sachet tomatoes and allow to cook till it stops tasting like raw tomatoes (or just cook the sauce for 15 minutes). Now add in the basmati rice and seasoning and stir till.

Combined, cook for another 3-4 minutes - if you want to get the party taste leave it for another 5 minutes. It will get burnt but that’s where the party taste comes from. Serve hot with Chicken or Meat or Fish.😉.
