Brinjal Biriyani. Biryani with brinjal gravy with some onion raita makes a heavenly combination. I have tried various brinjal gravy and this is the best recipe I would say. I got this recipe from my neighbour who worked in a Muslim catering.
This style of side dish is prepared in Bangalore restaurants or at Weddings and served along with spicy biryanis.
The tanginess and sweetness of the dish pairs well with any spicy Biryanis or Pulaos.
In North India, Biryanis are usually served along with raitas and salans.

Ingredients of Brinjal Biriyani

You need 2.5 cups of Basmathi rice.

You need 300-400 g of Brinjal chopped lengthwise.

It’s 1-2 of sliced Jalapenos(user preference).

You need 2-4 tbsp of cooking oil/margarine.

It’s 1-2 of Tomatoes chopped.

It’s 1 of Bellpepper chopped/cubed (optional).

Mix turmeric powder to brinjal.In a deep pan heat the oil/margarine and saute onion, ginger garlic paste until become golden..

Add brinjal, jalapenos and stir fry for 5 minutes until brinjals are half cooked..

Add tomatoes and biriyani mix and cook for 2 minutes in medium heat..

Wash rice and add to the same pan with cooked brinjals and add 3- 3.5 cups water.Cook the rice in medium heat(lid closed) until its cooked well..

Add cilantro and bellpepper and close the lid and heat for 5minutes lid closed..

Mix well and serve hot!.Enjoy with any side dish you like..
Don't cut the pieces all the way so that the pieces stay together.
Add the brinjal pieces one by one.
Close lid and fry on low flame.
