The aroma, taste and texture is simply beyond.

No frying is involved, making it a healthier way to prepare Egusi Soup.

Prepare of Assorted Beef.

You need of Stockfish.

You need 2 of Dried Fish.

Prepare of cow skin aka ponmo.

Prepare 2 of milk cups of Egwusi ground smoothly.

It’s 2 of Cooking spoon full of Palm oil.

Prepare 2 handful of water leaf. picked washed and finely chopped.

Prepare 1 of Cooking spoonful of grinded crayfish.

Prepare of Periwinkles.

Prepare of Dried Shrimps.

It’s of onions finely chopped.

You need of fresh yellow pepper pounded or grind.

It’s 1 tsp of black pepper.

It’s of Stock cubes (optional).

Prepare to taste of salt.
Akpuruakpu Egusi: where the ground egusi is moulded into balls and cooked in the soup such that you will be eating the egusi balls like meat while enjoying the meal.
Nigerian Egusi soup can be cooked with vegetables like (ugu) (fluted pumpkin), amaranthus (Aleho, green), tomatoes, bitter leaf, Spinach,water leaf and so on.
Egusi soup tastes great with all those green leafy vegetables but honestly, waterleaf has a way of softening the soup and making it so enjoyable and easy to swallow.

Egusi with Dried Water leaves Soup step by step

Washed the meat with pomo and season with onion, garlic, salt, pepper, a bit of ginger and cook till tender..

Add stockfish and allow to cook till tender too… Add about a jug of water and allow to boil.

Put the already grinded Eguwsi in a small mortal, add salt, onion and fresh pepper and pound till it starts to lump together and brings out oil.

When the meat and stock fish boils, add the lumpy egwusi. with the two spoonfull of palm oil and allow to cook for about 10 mins before you stir the content…

After that throw in the washed Dried fish, periwinkles and Dried shrimps and stir cook for another 10mins. (You always need to allow the Egwusi cook properly).

By now, the soup is becoming thick, add your crayfish, pepper and taste for salt..

Lastly add the finely chopped dried water leaves and give a good stir and 1 tsp of black pepper. (it gives the soup a unique flavour and taste)
Allow to cook for some minutes and that"s it…Egwusi with Dried water leaves is ready to eat…..

How to cook egusi soup in simple steps.
Add ground melon to a bowl, add about a cup of water and mix to form a paste then set aside.
Wash and chop the spinach, drain in a colander and set aside.
Once that is done, your egusi is ready to be served.
