After making so many chia puddings, I have to say the one combination I really love and would like to share with you is my Kiwi Chia Pudding. As you know, I grew up in Brazil and I always ate kiwi while living there.

Ingredients of Kiwi chia seed pudding

  1. Prepare of kiwi (peeled and sliced).

  2. Prepare of coconut milk.

  3. It’s of chia seeds.

  4. It’s of honey.

  5. You need of vanilla extract.

Once you have this base, you can pretty much do anything you want.

I typically add a few drops of liquid Stevia and some vanilla and go from there.

Kiwi chia seed pudding step by step

  1. First of all, soak chia seeds in coconut milk at least 1 hour..

  2. Stir in 2-3 times to avoid lumps..

  3. Soaked chia seeds form a gel-like consistency. If this is too thick then add 1/2 cup more coconut milk till you get your desired consistency..

  4. Once you prepared the perfect consistency mixture of coconut milk & chia seeds, add honey and vanilla extract. Mix well.

  5. Take large glass and divide this mixture into two..

  6. Add chopped kiwi fruits (puree if using pureed kiwi).

  7. Garnish with kiwi pieces..

  8. Serve this kiwi chia seed pudding chilled..
