Ugali and sukumawiki. Ugali (when it is cooked as porridge, it is called uji) is usually served with stew or sukumawiki (also known as kale). It is the most common staple starch featured in the local cuisines of the African Great Lakes region and Southern Africa. When ugali is made from another starch, it is usually given a specific regional name.

In Tanzania, Kenya and many parts of East Africa, colewort are more commonly known by their Swahili name, sukuma, and are often referred to as collard greens.

It is also commonly mistaken for kale.

The Ugali is your basic cornmeal prepared very much like how you would make Polenta.

  1. You need 100 g of maize flour.

  2. You need 1 of tomato.

  3. It’s 1 of onion.

  4. It’s of sukumawiki.

The Sukuma Wiki is a stew made with primarily kale, but I've seen it done with spinach and collard greens mixed in with the kale.

It was interesting to learn that Sukuma Wiki means "week-pusher" or "stretch the week" in.

I had my ugali with sukuma wiki and nyama choma which simply means meat.

Sukuma wiki is a lightly stir fried vegetable sauce that is used as an accompaniment for the ugali.

Ugali and sukumawiki instructions

  1. Boil water until boiling point.

  2. Add flour spontaneously while stirring till it hardens.

  3. Wait for three minutes to bake then serve your ugali.

  4. Chop onion and tomato then fry until the onions turn golden colour.

  5. Add sukumawiki and a pinch of salt then cover with a lid for three minutes then serve your dish.
