Kanika/Flavoured Sweet Rice. Kanika is a mildly sweet fragrant rice flavored with some spices and ghee (the clarified butter) loaded with cashew nuts and raisins and is colored with the turmeric. The basic feature of the rice is the well separated puffed grains embellished with a perfect shine from the Ghee. Take a rice properly washed and soaked..

Take 3:5 cup water in the clay pot and place the clay pot in low to medium flame..

Put all the dry spices in blending jar. Take a small piece of nutmeg and jeera..

Cover the jar and make powder it. Add 1 tsp sugar and again grind it..

Check out water add dry spice powder..

Add raisins, soaked rice and dont mix it and no need to use spatula..

Cover the pot and cook in medium to low flame..

Remove the lid and add jaggery and ghee..

Now cover the pot for 5 minutes and cook it in low flame..

After 5 minutes remove the lid and check it. Switch off the flame..

And cover the clay pot for 30 minutes. The remaining water in rice is cooked with heat of clay pot..

After 30 minutes the kanika is ready for serving. Add tulsi leaves and serve to god as a bhog..
