Ingredients of Egg masala

  1. Prepare 5 of boiled eggs.

  2. It’s 2 of large onions.

  3. It’s 2 of tomato.

  4. It’s 2 of green chilli.

  5. You need 5 of cloves.

  6. You need 2 tsp of ginger-garlic paste.

  7. You need to taste of Salt.

  8. It’s 1 tsp of red chilli powder.

  9. You need 1 tsp of Kashmiri mirch powder.

  10. Prepare 2 tsp of besan.

  11. It’s leaf of small bay.

  12. Prepare 1 of cardamom.

  13. Prepare 1 tsp of turmeric.

  14. Prepare 1 tsp of coriander powder.

  15. It’s 1 tsp of cumin powder.

  16. Prepare as needed of Oil.

  17. Prepare Pinch of gaeam masala.

  18. It’s 1 tsp of kasuri methi.

It is made using eggs, onions, urad dal and curry leaves.

Egg masala instructions

  1. First of all Grind onions into fine paste.Grind ginger, garlic and green chilies into paste.Puree tomatoes..

  2. Then Heat 1 tablespoon oil in a pan.Make cross incision into the eggs without breaking them..

  3. Mix turmeric +red chilli powder + salt to gather. Rub a small amount of turmeric and red chilli powder on each egg, making sure to fill the slit portions too with the powder..

  4. Gently fry the eggs in oil until it starts turning brown on all sides. Remove once done from the pan.into the same pan add remaining oil. Fry cloves, bay leaf and cardamom in oil.Add ginger-garlic-green chilli paste and cook until it doesn’t smell raw any more..

  5. Add onion paste and continue to cook till it starts browning..

  6. Add tomato puree, cook till oil separates from the sides of the pan.Add all the masala powders except kasuri methi and garam masala.Stir and cook for 3 minutes.add besan and mix well..

  7. Add ¾ cup water and bring it to boil. Cover and continue to boil for 15 minutes. If the water evaporates completely add more water accordingly.Add the eggs and cook for another 10 minutes on low flame.crush kasuri methi and add it to the curry..

  8. Garam masala is added at this stage. Give it a good stir, wait for 2 min. Serve it..

Finally add the finely chopped cilantro, mix once again gently and switch off.

This egg masala goes very well with chapatti, pulav and white rice.
