Risotto is a classic that everyone should know, and this EASY creamy Chicken and Mushroom Risotto is one of my favourites.

In this post, I bust a few risotto myths, including having to stand over the stove stirring constantly, the need to heat the chicken broth and add it gradually into the risotto.

You can have Thermomix Chicken and Mushroom Risotto using 9 ingredients and 1 steps. Here is how you cook that.

Ingredients of Thermomix Chicken and Mushroom Risotto

  1. Prepare of garlic.

  2. It’s of of an onion.

  3. You need of olive oil.

  4. It’s of cubed chicken breast.

  5. It’s of sliced fresh mushrooms.

  6. It’s of arborio rice.

  7. You need of vegetable stock paste (or chicken stock paste).

  8. Prepare of water (or you can use 900g water + 100g white wine).

  9. Prepare of fresh parmesan, roughly cubed (optional).

Serve the risotto with parmesan cheese sprinkled on top.

Cook, stirring frequently, until all of the wine has been absorbed.

Thermomix recipes My sister once gave me a beautiful chicken, bacon and mushroom risotto recipe, passed to her from her boyfriend who was a chef.

It has always been one of our favourites and one of the few meals I could cook really well and be delicious every time (prior to getting my Thermomix!).

Thermomix Chicken and Mushroom Risotto instructions

  1. Place garlic and onion in Thermomix bowl and chop on speed 5 for 3 seconds.

  2. Scrape down sides, add olive oil, chicken breast and saute for 4 minutes, 100°, reverse speed soft.

  3. Add mushrooms, arborio rice, vege stock paste, water and cook for 16 minutes, 100°, reverse speed 1.5.

  4. Immediately pour into a serving dish and cover for 5 minutes or so, to allow juices to soak in.

  5. Rinse out Thermomix bowl. If using parmesan, place in clean bowl, and grind on speed 9 for 10 seconds. Sprink.

Pour the chicken stock slowly into the pan one cup at a time and stir frequently.

Only add the next cup of stock once the first cup is nearly all absorbed by the rice.
