Ingredients of Arabic Lamb Kabsa

  1. Prepare 500-600 of gms. mutton with bones.

  2. It’s 1 cup of rice, soaked in water for 25-30 minutes.

  3. It’s 2-3 tbsp. of ghee.

  4. You need 2 of bay leaves.

  5. Prepare 1 of " cinnamon stick.

  6. It’s 2-3 of green cardamoms.

  7. You need 4-5 of cloves.

  8. You need 2 of onions, chopped.

  9. You need 1 tbsp. of ginger-garlic paste.

  10. You need 1 tsp. of tomato paste.

  11. You need 1-2 of tomatoes, chopped.

  15. Prepare 1 tsp. of pepper powder.

  16. You need 1 tsp. of garam masala powder.

  17. Prepare 1 tsp. of lime zest.

  18. You need pinch of saffron.

  19. You need pinch of nutmeg powder.

  20. Prepare 1 of dried lime.

  21. Prepare of few dry fruits, chopped to garnish.

  22. Prepare of chopped coriander leaves to garnish.

Arabic Lamb Kabsa step by step

  1. Cook the rice till half done. Keep aside. Heat the ghee in a pan and temper with bay leaves and all the whole garam masala. Saute for a few seconds..

  2. Then add the onion. Fry till they are slightly browned..

  3. Add the mutton and fry for 5-10 minutes..

  4. Add the ginger-garlic paste and tomatoes. Saute well..

  5. Add all the dry spices, tomato paste, lime zest and the dried lime..

  6. Mix everything well and simmer, covered on a medium flame till dry..

  7. Separate the mutton pieces from the gravy and keep aside..

  8. Add the rice to the gravy and cook for 3-4 whistles..

  9. Switch off the flame and open the lid after it has cooled down..

  10. Arrange the Kabsa on a platter and garnish with the cooked mutton pieces, chopped nuts and coriander leaves. Serve with salad for a sumptuous meal..
