Ingredients of Chhole bhature

  2. You need of maida.

  3. You need of thick curd.

Chole bhature is Punjabi special chickpea curry served with deep-fried puffed bread bhature and the combination is absolutely amazing and lip-smacking delicious.

Chhole bhature instructions

  1. In a mixing bowl add maida,salt, baking soda,suji and mix well.then add curd and mix untill it likes crumbly.then add water and knead well and make a soft dough.cover and keep in a dark and warm place for 2-3 hours..

  2. In a pressure cooker put chickpeas,add cinnamon,cloves bay leaves and 1/2 tsp salt.take tea leaves in a muslin cloth tie well and put in cooker.add 2cup water and cook for 15 minutes on medium flame or five whistle comes.release the pressure naturally. Take away the tea leaves bag and whole spices..

  3. In a wok add 2-3 tbsp oil heat well.add cumin seeds, black pepper corns, saute few seconds add chopped onion saute untill it turns brown add ginger garlic paste and saute one minute.then add little water turn the flame medium cooked 2-3 minutes when the onion cooked well.open the lid add tomatoes, green chillies and all spices.mix well add salt and 1/4 cup water.cover and cooked untill tomatoes become soft and mushy. cooked the masala untill the oil released.then add boil chickpeas with water..

  4. With the help of ladle mash some chickpeas and mix in the masala.add water as your required,cook on medium flame for 5 minutes. then off the flame. Garnish with coriander leaves.

  5. Now take the dough make medium size balls apply oil on each balls and cover with a wet clothes.in a kadhai add oil and heat it on high flame. now dust some flour on rolling board and take one balls roll it on rolling board.now put this on hot oil and flip after 40 seconds.fry the bhaturas on high flame make sure don"t leave it in oil for more time..

  6. Serve the chhole bhature with mango pickle and salad..
