Recipe: Tasty Pandan Pancake Delicious, fresh and tasty.

Pandan Pancake. Pandan pancakes are made from pandan leaves with delicious and very naughty freshly grated coconut and palm sugar filling. Palm sugar comes from the sap of the new branches of coconut leaves, sold in cylinder chunks. They are then chopped up ready for use in yummy prizes like pandan pancakes.

My pandan pancakes recipe is very easy to whip up and it tastes delicious with the pandan flavour!

You can have Pandan Pancake using 13 ingredients and 4 steps. Here is how you achieve it.

Ingredients of Pandan Pancake

  1. Prepare 2 of eggs.

  2. It’s 50 gr of sugar.

  3. You need 100 gr of all-purpose flour.

  4. You need 10 gr of milk powder.

  5. Prepare pinch of salt.

  6. You need 1/4 tsp of baking soda.

  7. It’s 50 ml of milk.

  8. Prepare of Pandan juice / pandan paste.

  9. You need of (If you wish to make a chocolate one, add 10gr cocoa powder & reduce 10gr flour).

  10. Prepare of Bit of butter (~3gr, melted).

  11. It’s of Vanilla (optional).

  12. Prepare of Filling.

  13. It’s of Chocolate spread / any jams / etc.

These easy pandan pancakes pair nicely with some maple syrup and fresh fruit.

To make pandan pancakes, in a large bowl, combine the all-purpose flour, baking powder, and granulated sugar.

In another large mixing bowl, combine the milk, egg, canola oil, and pandan extract.

Add the milk and egg mixture into the flour mixture and mix well until well combined.

Pandan Pancake instructions

  1. Whisk eggs and sugar until well combined then add dry ingredients.

  2. Pour milk (i combined milk and pandan juice before pouring it) or simply add drops of pandan paste.

  3. Cook pancake and fill as you wish.

  4. Fold and enjoy!.

The pandan leaf has a lovely unique taste, and if you're going to give it a try- we think pancake day is the perfect time!

We used pandan extract to make the pancakes, and the coconut milk to make the custard filling.

And the pancake's fluffy texture mixed with the fragrant pandan flavour goes perfectly together.
