Egg Masoor Torka. Egg Tadka also popularly known as "Dimer Torka" back in West Bengal is a much loved Dhaba food with unbeatable flavors. It's ready availability in the roadside stalls (Dhabas) and it's economical price makes it even more popular and a sought after dish. A very popular recipe in dhabas, I have grown up eating this egg dal tarka (torka in Bengali).
It is a very street food style preparation in Bengal.
The curry is packed with proteins.
You can as well add other ingredients like minced chicken or pork, you can even keep it vegetarian by not adding scrambled egg as well.
You can have Egg Masoor Torka using 19 ingredients and 12 steps. Here is how you achieve it.
Ingredients of Egg Masoor Torka

Prepare 250 gms of masoor dal.

Prepare 1 of bay leaf.

It’s 1/2 tsp of cumin seeds.

You need 2 of cardamon pods.

You need 1 inch of cinnamon stick.

It’s 2 of cloves.

It’s 2 of eggs.

You need 1 of chopped onion.

You need 1 tsp of ginger paste.

It’s 1 tsp of garlic paste.

It’s 2 of chopped green chillies.

Prepare 1 tsp of red chilli powder.

Prepare 1 tsp of jeera powder.

It’s 1 tsp of coriander powder.

It’s 1/2 tsp of turmeric powder.

You need 1/2 tsp of kasuri methi.

It’s 2 tbsp of tomato ketchup.

Prepare as per taste of Salt.

How to make Dhaba Style Egg Tadka Recipe.
Egg Tadka dish is a Punjab speciality and is available widely in the dhabas.
It is very popular lentil dish in Northern India.
Egg Masoor Torka step by step

Wash the dal to clean it well..

Heat oil in a kadai and then add bay leaf and cumin seeds. Then add crushed cardamon pods, cinnamon stick and cloves..

Stir them well for the aroma to be released..

Add chopped onions and green chilis. While stirring them together, add chopped tomato and sprinkle salt and turmeric powder and saute them until they soften..

Then while stirring it well, add ginger- garlic paste, jeera powder, coriander powder and red chilli powder along with some water and saute it well..

Add in the washed dal and give it a stir to help them getting mixed well..

Saute until the oil oozes out from the sides. Then add water, and cover it with a lid to let it be cooked for 10 minutes..

After 10 minutes, remove the lid and check whether the dal is cooked well..

Then if it is cooked, add 1 tsp of kasuri methi and 2 tbsp of tomato ketchup, and stir it well..

Beside it, heat another pan and add some oil in it. Break in the eggs and scramble them and cook until the scrambled eggs are cooked..

Once it is done, add the scrambled eggs over the top of the cooked dal and then stir it slowly..

Finally, serve the Egg Masoor Torka, along with parantha or roti..
This is a very easy dish and is served hot with rotis, tandoori rotis, nan or kulchha.
It's great with any type of bread like naan, tandoori roti, lachha paratha. but with plain chapati / roti, the pair becomes heavenly.
I have already posted some recipes on 'dhaba style' but the most popular and well known recipe is 'dim torka' or 'whole moong daal with scrambled egg'.
