Simple egg thali. Simiple veg thali lunch with bhindi roti rice mango juice. The great Indian thali meal is a wholesome, balanced combination of various dishes served next to each other on a single plate. India on my plate is the depiction of everyday meals inspired by Indian cuisine.
I have always been a huge fan of thali's, but have never found an blend that is perfect to the palate.
So I decided to create one that is simple, yet palatable and super duper delicious.
The Haryanvi thali is really simple.

Steamed rice: in a pan add washed rice and sufficient water. Add cardamoms. Keep on gas (high flame) and allow for boiling. In between add water if required. Once rice is cooked, drain out the water..

Toor dal: in a Pressure cooker add washed toor dal, salt, turmeric powder and close the lid. Wait for 3-4 whistles and switch off the flame. Heat a pan, add mustard oil. Add red chilly, mustard seeds, jeera and saute for few seconds. Add pinch of hing, now add the boiled dal. Mix well. Add ginger paste, sugar and mix well. Keep on medium to high flame until the dal is ready. Switch off the flame, transfer to serving bowl..

Ridge gourd & potato curry: heat a pan. Add 2 tbsp oil. Add jeera, red chilly and saute for few seconds. Now add chopped onion, add salt and saute until onion become soft. Now add crushed garlic and ginger paste. Saute on low flame for few seconds. Add turmeric powder, jeera powder, coriander powder, red chilly powder mix well. Now cover with lid and keep on low flame 1 minute. Remove the lid, add water, sugar. Mix well. Cover the lid and keep on low to medium flame to let it cook..

Egg curry: marinate the boiled eggs with 1 tsp turmeric powder and pinch of salt. Now heat a pan, add 2 tbsp oil. Fry the boiled eggs until golden brown. Take then out and keep aside..

On the same pan add mustard seeds, jeera and red chilly. Saute for few seconds. Now add chopped onion, salt and saute until onion become soft. Add ginger garlic paste and saute for few seconds. Now add chopped tomatoes, saute for few seconds until tomatoes are tender. Now add turmeric powder, jeera powder, coriander powder, red chilly powder, garam masala, kasuri methi. Now add 1 tbsp water and saute the masalas to cook properly. Now add chopped potatoes and mix well..
