Sahlab. Sahlab is a Middle Eastern milk pudding, usually served to warm you up on a cold day. Kind of how we drink hot chocolate in winter. Sometimes other nuts and raisins are incorporated along with rose water or orange blossom to give it a unique flavor.

Salep, also spelled sahlep or sahlab, is a flour made from the tubers of the orchid genus Orchis (including species Orchis mascula and Orchis militaris).

These tubers contain a nutritious, starchy polysaccharide called glucomannan.

Salep flour is consumed in beverages and desserts, especially in the cuisines of the former Ottoman Empire, notably in the Levant where it is a traditional winter.

You can have Sahlab using 7 ingredients and 4 steps. Here is how you achieve that.

Ingredients of Sahlab

  1. It’s 80 ml of full cream milk powder.

  2. It’s 1 teaspoon of sahlab powder.

  3. You need 40 ml of white sugar.

  4. It’s 1 touch of ground gum arabic.

  5. You need 600 ml of cold water.

  6. It’s 1 teaspoon of orange blossom water.

  7. It’s 1 pinch of ground cinnamon on top.

Sahlab instructions

  1. Place the milk powder, sugar, sahlab and gum Arabic in a saucepan. You must mix the ingredients very well before adding the water..

  2. Add the water, whisk well and make sure all the solid components are dissolved at the bottom of the saucepan before turning on the heat..

  3. Turn on medium heat and keep whisking till boiling. Add the orange blossom water..

  4. Sprinkle the cinnamon on top of the cups. Enjoy!.

You can add more or less cornstarch if preferred.
