Ingredients of "Muthokoi"

  1. You need half of kg uncoated maize.

  2. You need 3/4 kg of beans.

  3. It’s 1 of bell pepper.

  4. It’s 4 of tomatoes.

  5. Prepare 2 of onion bulbs.

In fact, its origins can be traced to eastern province where the Kamba hail from.

Green peas are added to the maize.

Other type of beans can be used as an alternative.

De-husked maize is available in grocery stores.

"Muthokoi" instructions

  1. Cook the mixture of the uncoated maize and beans till ready.

  2. Chop your onion, tomatoes, bell pepper and corriander.

  3. Fry the onions in oil till they golden then add your chopped tomatoes,bell pepper and corriander then stir.

  4. After the tomatoes have cooked pour in your already cooked uncoated maize and beans mixture and stir.let cook for five mins.

  5. Once its ready you can serve and enjoy.
